If I have to talk about ‘insanity’ and ‘obsession’ for food, I would first talk about “idli” because they hold
the best of my childhood memories. I can gorge on them for the whole day and they made me go in the
festive vibes. And it has been years and I am still stuck with this obsession, yes! I am carrying this legacy
from my mother. I have started giving it more tastes or more fusions and sometimes transformations
too.
Four years ago I came across a fantastic breakfast option which was Rava Idli. The recipe of course came
from my mother. It is the most simplest and nutritious recipe you can add to your cookbook as it can
take any amount of vegetables. So, the recipe follows like:
1 cup of Sooji/Rava/Semolina
1 onion (chopped)
1 tomato (chopped)
1 carrot (chopped)
50g beans (chopped)
2 Green chilies or as per your taste (chopped)
2 tablespoon of curd
Salt as per your taste
1 sachet of ENO
For tempering we require
2 teaspoon of Ghee
1 teaspoon of mustard seeds
10 to 12 Curry leaves
½ teaspoon of urad dal
½ teaspoon of chana dal
10 pieces of Cashew nuts (chopped)
To start with roast sooji on medium flame for 10 minute till it become slightly pink in color. Let it cool.
After that, mix all the chopped vegetables in it. Also mix curd and salt in it and mix everything well. Use
water to make a thick consistency of the batter. Make the tempering by heating the ghee and then
putting mustard seeds in it. Once it splutter put curry leaves, urad dal, chana dal and chopped cashew

nuts and cook it till cashew nuts become pink in color. Mix it in the batter. Keep the batter for 20
minutes. In the end just before making the idlis put the sachet of ENO in it. Keep it for 1 minute and
then I make idlis in my microwave and the result is amazing. So you can put it in the microwave idli
mould and cook it for four minutes and idlis will be all set.
Keep it for 2 to 3 minutes before serving it.
